This dish is great for breakfast, lunch, or dinner. You could add as many veggies to sauté with the quinoa. Using a puree of roasted bell peppers makes it even better! I have a video on my Instagram showing how to roast peppers.

This is a quick meal and can be prepped and cooked in less than 20minutes. Making a parchment envelope of 1 fillet is a perfect meal for 1.
However, you can make multiple envelopes for a group.
